INGREDIENTS:

1/2 cup chopped bacon

1 cup chopped onion

2 tsp. minced garlic

2 (16 oz. each) cans blackeye peas, undrained

2 1/2 cups reduced-sodium chicken broth

1/4 cup FRANK'S® REDHOT® Original Cayenne Pepper Sauce

1/2 tsp. dried thyme leaves

DIRECTIONS:

COOK bacon in large saucepan until crisp. Add vegetables and cook 5 min. until tender.

STIR in remaining ingredients. Heat to a boil. Simmer, covered, 15 min. until flavors are blended.

LADLE soup into bowls. Serve with rice and garnish with parsley.

TIPS:

Tip: For an attractive presentation, pack cooked rice into small ramekin dishes. Unmold into soup bowls. Ladle soup around mound of rice.
