SPICY HAM & BLACK BEAN SOUP

INGREDIENTS:

2 tbsp. vegetable oil

1 large onion, chopped

3 cloves garlic, minced

4 (15 to 19 oz.) cans black beans, undrained

4 cups reduced-sodium chicken broth

1/3 cup FRANK'S® REDHOT® Cayenne Pepper Sauce

1 tbsp. ground cumin

4 cups (about 1 lb.) diced boiled ham, smoked ham or smoked kielbasa sausage

1 cup diced canned tomatoes

DIRECTIONS:

HEAT oil in large saucepot; saute onion and garlic until tender. Stir in beans, broth, Frank's RedHot Sauce and cumin.

HEAT to boiling. Simmer, partially covered, 20 min.; stirring often.

PUREE 2 cups soup mixture in covered blender. Return to saucepan. Stir in ham and tomatoes; heat through.

TIPS:

Tip: This soup freezes well. Freeze leftovers in individual portions. Thaw and reheat in microwave oven.
